Destillate
A premium distillate is crafted by heating the mash. The vapors generated during this process contain alcohol, and upon cooling, they transform into a liquid, resulting in pure distillate.
Repeating the process can enhance the alcohol concentration and flavor intensity. However, when producing high-quality brandies, it is essential to identify the precise moment for separating the middle fraction. This is because the initial and final parts of the distillation process are not as high-quality as the core portion. In high-quality brandy production, these sections are therefore "separated" and subjected to another round of distillation. Ultimately, this yields fine fruit distillates made entirely from natural ingredients.
