Fruit Brandy
A brandy is a spirit distilled from the fermented mash of fully ripe fruit such as Williams pears. The spirit obtained is simply reduced to drinking strength with distilled water. No alcohol of any other origin may be added to the brandy.
Brandies are considered to be the highest quality spirits. While high-quality neutral alcohol may be added to schnapps, the alcohol in brandy comes exclusively from the named fruit. For example, Herzstück Williams Pear Brandy from Tiroler Kräuterdestillerie is made from fully ripe pears, while apricot brandy is made from sun-ripened apricots, which are called apricots in Tyrol.
The difference between spirit and brandy lies in their production and the resulting quality level. In the case of brandy, the mash of fully ripe fruit is distilled twice.
In the case of spirit, fruit, berries or other flavouring ingredients such as Swiss stone pine cones are infused in alcohol and then distilled.
High-quality spirits should breathe. The best way to do this is in a long-stemmed brandy glass, also known as a nosing glass. The shape is crucial. The glass should be narrow at the top and have a bulbous curve at the bottom. The natural aromas collect at the bottom and are optimally channelled into the nose.
A narrow glass opening also ensures that the bouquet does not evaporate too quickly. A long stem also keeps the heat from your hands away from the drink.
Brandy is drunk at a recommended drinking temperature of 14 - 17° C. A brandy should not be stored in the fridge. It should be stored in a room with a constantly cool temperature, such as a cellar, a pantry or a special refrigerator.
